South Indian style Spinach

Loosely based on Atul Kochar’s recipe, serves 3 as a side  IMG_0086 (1)

Ingredients

300g washed and shredded spinach

1 tbsp. vegetable oil

1 fresh red chilli , chopped

3 cloves garlic, minced

1 small red onion , chopped

0.5 tsp black mustard seeds

0.5 tsp cumin seeds

0.25 tsp crushed chilli flakes

0.5 tsp sea salt flakes

Lemon slices to garnish

 

Method:

Heat the oil on medium heat in a large wok , and add the whole spices and salt until they splutter. Add the garlic, chilli and onion , and cook gently , stirring, until the onion is translucent ( about 5 minutes, adding a splash of hot water from time to time to avoid it sticking). At this stage add the spinach and stir fry till wilted. Serve garnished with lemon slices .
