Parsnip & Carrot Soup

100g chopped raw carrot

100g chopped raw parsnip

3 garlic cloves , chopped

10 sprays frylight

1 tsp ground cumin

0.25 tsp salt

0.25 tsp  black pepper

500ml just boiled water

50g strained greek yogurt

0.5 tsp red chilli flakes

1 tbsp. toasted pumpkin seeds

 

 

Method:

Gently saute the carrot , parsnip , and garlic in the frylight with the cumin and pepper. Add the hot water and leave to simmer for about 30 mins. Cool and puree in a blender ( or use a stick blender) with the yogurt. Reheat to simmering point and serve garnished with pumpkin seeds , chilli flakes , and some sea salt and coarse ground black pepper  if liked.
